Prepare the mango

Peel the green mangoes and cut them into thin slices.

Roast in the air fryer

Arrange the mango slices in a single layer in the air fryer basket and roast on the medium setting for 10 minutes, until the edges are lightly browned.

Season and chill

Mix the turmeric, mustard seeds, vinegar, ground red pepper, and salt. Pour over the roasted mango slices, transfer to a jar, and refrigerate for at least 30 minutes.

Reminder

Use green mango that is not yet ripe; ripe mango will fall apart and will not have the texture of a pickle. Turmeric may stain your hands and counter, so wearing gloves is recommended.
