Boil the water in the lower pot
10 minPour the water into the lower teapot and bring it to a boil. Once it starts boiling, reduce the heat.
Cardamom tea is a favorite for evening gatherings in Iraqi homes. Black tea is slowly steeped in a two-tier teapot with a few cardamom pods, making a strongly aromatic, gently spiced drink served unsweetened in small glasses.
Pour the water into the lower teapot and bring it to a boil. Once it starts boiling, reduce the heat.
Add the black tea and cardamom to the upper teapot and pour in a few spoonfuls of boiling water. Set it on top of the lower teapot and steep over low heat for 25 minutes.
Strain the brewed tea through a fine-mesh sieve into small glasses. Serve hot.
Do not boil the tea itself, as boiling can make it bitter. Once the water in the lower teapot boils, reduce the heat and place the upper teapot on top. This recipe contains no added sugar and is suitable for people monitoring their blood sugar.
