A winter appetizer in Iraqi cuisine, this olive oil dish is made by simmering dried fava beans soaked overnight with onion and spices until tender. Dried fava beans have a richer, earthier flavor than fresh ones.
Sauté the onion and garlic cloves with the cumin in olive oil for 5 minutes.
Drain and add the soaked dried fava beans. Add enough water to cover them.
Cover and cook over low heat for 40 minutes, until the beans are tender, adding water if needed.
Add the red pepper flakes, lemon juice, and salt. Stir and serve.
Remember to soak the fava beans overnight; otherwise, the cooking time will be considerably longer.
