Inspired by Iraqi citrus condiments, this recipe quickly dries bergamot peel in an air fryer to make a sugar-free preserve. Sweetened with stevia, it offers a low-carbohydrate breakfast accompaniment.

How to make it?

Dry the peel in the air fryer

Finely slice the bergamot peel and arrange it in a single layer in the air-fryer basket. Dry over medium heat for about 8 minutes, until the edges curl.

Boil the flesh

Boil the bergamot flesh with water in a saucepan for 8 minutes to soften.

Combine

Combine the dried peel with the softened flesh. Add the lemon juice and stevia and boil for a further 5 minutes.

Fill the jars

Spoon the hot preserve into clean jars and close the lids. Let them cool at room temperature, then refrigerate.

Reminder

Finely slice the peel before putting it in the air fryer. Thick pieces will fail to dry and remain raw in the center. Safety: sugar acts as a preservative in jam, so this sugar-free version will not keep for long. Store the jar in the fridge and use it soon. Contains no allergens.

Kabukları airfryer'da 8 dakika yerine 11 dakika tuttum çünkü dilimlerim biraz kalın kalmıştı, kenarları o sürede iyice kıvrıldı ve reçele beklediğimden daha güzel bir doku kattı.
