This cake from Irish home cooking is made for winter celebrations. Soak raisins and dried apricots in strong brewed tea overnight, then combine them with a flour-based batter and bake the next day. The fruit soaked in tea gives the cake a moist texture.
Put the raisins and chopped dried apricots in a bowl with the strong brewed tea. Cover and soak overnight for at least 8 hours.
The next day, add the flour, brown sugar, egg, baking powder, and cinnamon to the fruit-and-tea mixture. Stir until you have a smooth batter.
Pour the batter into a greased cake pan.
Bake in an oven preheated to 170°C / 340°F for 60 minutes, until a toothpick inserted in the center comes out clean.
Important: Soak the dried fruit in tea for at least 8 hours; otherwise, it may not soften and absorb enough liquid, and the cake may be dry. Allergens: wheat (gluten) and egg.
