Prepare the spinach

These fritters use up leftover spinach leaves, bound with egg and a little flour, and are cooked in an air fryer without frying oil. Serve them hot at a brunch for a crowd. Reducing the amount of flour can make them suitable for people with diabetes.

Add the egg, flour, crumbled Turkish white cheese, grated onion, dill and black pepper to the squeezed spinach. Mix until evenly combined.
Shape portions of the mixture into patties and arrange them in the air-fryer basket with space between them. Brush with a thin coating of olive oil.
Cook in an air fryer preheated to 190°C / 375°F for 12 minutes, turning once halfway through, until golden. If you do not have an air fryer, bake on a tray lined with parchment paper in an oven preheated to 200°C / 390°F for 20 minutes.
Squeeze the spinach thoroughly; otherwise, the mixture will become watery and fall apart in the air fryer. Allergens: contains wheat (gluten), milk and dairy products (Turkish white cheese), and eggs.
