A staple drink on Jamaican streets, ginger soda is made by boiling and steeping fresh ginger in plenty of water, then balancing it with lemon. Top it with sparkling mineral water for a fizzy, sharp, refreshing homemade soda.

Step by Step

How to make it?

1

Boil the Ginger

20 min

Put the grated ginger and water in a pot and bring to a boil. Simmer over low heat for 20 minutes, until the water has a strong ginger aroma.

2

Steep and Strain

15 min

Remove from the heat, cover, and let steep for 15 minutes. Strain through a fine-mesh strainer to remove the ginger pieces.

3

Sweeten and Serve

10 min

Stir the sugar into the strained syrup while it is hot, until dissolved. Once cool, add the lemon juice. To serve, pour two spoonfuls of syrup into each glass, top with sparkling mineral water, and serve over ice.

Reminder

Steep the ginger syrup for at least 15 minutes; straining it sooner will result in a milder flavor. Make the syrup concentrated and dilute it with sparkling water to your preferred sweetness.
