One of Jamaica’s tropical fruit preserves, this papaya jam needs careful cooking with fresh ginger because the fruit is naturally low in pectin. Getting the consistency right takes skill: jarring the mixture too early will leave it runny.

How to make it?

Prepare the papaya

Peel and deseed the papaya and cut into medium-sized cubes.

Leave to stand with sugar

15 min

Mix the papaya cubes with the granulated sugar and lemon juice and leave for 15 minutes to release their juices.

Boil

30 min

Transfer to a pan and add the grated ginger. Boil gently over low heat for 30 minutes, stirring constantly, until the mixture coats the back of a spoon.

Fill the jars

Fill clean jars with the hot jam, close the lids and leave to cool at room temperature.

Reminder

Test the consistency by dropping a little jam onto a cold plate. If it stays runny, the jam is not ready. Papaya is low in natural pectin, so stopping the cooking too soon is an easy mistake to make.

Tarifte 30 dakika kaynatın yazıyor ama benim tencerem geniş tabanlı olduğu için su daha hızlı buharlaştı, 22 dakikada kıvamı yakaladım. Geniş tencere kullananlar süreyi birkaç dakika kısaltabilir.

Papayayı küçücük küpler halinde doğradığım için kaynarken tamamen dağılıp pürüzsüz bir ezmeye dönüştü, parça parça bir doku istiyordum. Bir dahaki sefere en az 2 santimlik küpler bırakacağım.

Kıvam testini yapmadan kavanozladım, ertesi gün açtığımda reçel neredeyse şerbet gibi akışkan kalmıştı. Tencereye geri alıp 10 dakika daha kaynattım, ikinci seferde soğuk tabak testi işe yaradı.
