How to make it?

Dry the Turnip in the Air Fryer

Arrange the thinly sliced turnip in a single layer in the air fryer basket and dry it lightly at 80°C / 175°F for 12 minutes; this firms the texture of the pickles. If you do not have an air fryer, dry the same slices in a preheated oven at low heat for 20 minutes.

Make the Brine

Stir the rice vinegar, salt, and erythritol in a small bowl until dissolved.

Assemble the Pickles

Place the dried turnip slices in a jar and add the brine and piece of kombu.

Let the jar rest in the refrigerator for at least 20 minutes so the flavors can meld.

Drain the pickled turnip, sprinkle sesame seeds on top, and serve.
