Fatayer is a popular Jordanian pastry made by folding sumac-seasoned spinach into thin yeasted dough. Slightly tart and soft, these pastries are a favorite for breakfast and afternoon gatherings.

How to make it?

Knead and rest the dough

Dissolve the yeast and sugar in the lukewarm water. Knead with the flour, olive oil and salt until smooth. Cover and let rise until puffy.

Prepare the spinach filling

10 min

Massage the chopped spinach with salt and let it stand for a few minutes. Squeeze out the excess liquid by hand, then mix with the onion, sumac, olive oil and lemon juice.

Roll and fold the dough into triangles

15 min

Roll the dough into small rounds. Place the spinach filling in the center, fold three corners toward the middle to form a triangle, and press the corners together firmly.

Bake and serve

18 min

Bake in a preheated oven until golden. Serve hot or warm.

Reminder

Massage the spinach with salt and squeeze out the excess liquid; otherwise, the filling may become watery and the dough may open while you fold it into triangles. Press the corners firmly with your fingertips to keep the filling from leaking during baking. Allergen: contains wheat (gluten).
