Kabis is a Lebanese classic with a distinctive pink color, made by soaking turnips with beet slices in a vinegar brine. It contains no nuts and accompanies the meze plate at brunch.
Peel the turnips and cut into 1 cm-thick sticks. Thinly slice the beet.
Pack the turnip sticks tightly into a clean jar with the garlic cloves and beet slices.
Bring the water, vinegar and salt to the boil in a saucepan. Remove from the heat and leave to cool to lukewarm.
Pour the lukewarm brine into the jar, completely covering the vegetables. Close the lid and leave at room temperature for 3 days, then refrigerate.
Do not pour the brine over the turnips while it is still hot; wait until it is lukewarm. Hot brine will soften the vegetables too soon.
