Kabune is a rice pilaf served at weddings, religious observances, and memorial gatherings in and around Isparta. The rice cooks in lamb broth rather than water, which gives the pilaf its flavor. Cinnamon is used sparingly here as a spice to balance the strong aroma of lamb, not to add sweetness.

How to make it?

Simmer the lamb

Put the cubed lamb in a pot with 1.5 liters of cold water and bring to a boil. Skim the foam from the surface. Simmer over low heat for 55 minutes, until the meat separates into strands when pressed with a fork. Strain the meat and reserve the broth in a separate container; you should have 1.2 liters. Top up with hot water if needed.

Brown the lamb and chickpeas

Melt the butter in a pilaf pot, add the drained lamb, and cook over medium heat, turning until the edges brown. Add the cooked chickpeas, cinnamon, and black pepper and stir for 2 more minutes.

Toast the rice

Add the soaked and rinsed rice to the pot and stir for 3–4 minutes, until it absorbs the fat. Stop when the grains turn from translucent to milky white; over-toasting will break them.

Add the broth and cook

20 min

Add the measured hot broth and salt and bring to a boil. Reduce the heat to the lowest setting, cover, and cook without stirring for 18–20 minutes. When you uncover the pot, all the liquid should be absorbed and small holes should have formed on the surface.

Rest and fluff

Place a clean towel between the pot and its lid and let the pilaf rest away from the heat. Then gently fluff it once from the bottom up with a wooden spoon, without crushing the grains, and serve.

Reminder

Before cooking, soak the rice in warm salted water for 20 minutes and rinse until the water runs clear.
