For this dessert, shredded pastry is worked with butter, baked in small nests and left to cool before nut butter is piped into the centers. Using date syrup instead of a traditional boiled sugar syrup creates a diabetes-friendly balance, though shaping the delicate nests without breaking them takes skill.

Press the shredded pastry into muffin molds to form nests. Bake in an oven preheated to 170°C / 340°F until the edges are golden.
Once the nests are completely cool, fill a piping bag with the nut butter and pipe it into their centers.
Drizzle with date syrup, sprinkle with cinnamon and serve.
The pastry strands are brittle. Do not press too hard when shaping them in the molds, or you may make holes in the bases. Allergens: contains wheat (gluten), milk and dairy products, and tree nuts (in the nut butter).
