Baked for religious holidays in Cairo, kahk are buttery cookies filled with walnuts and shaped into rings. They are generously coated in confectioners' sugar straight from the oven and are a teatime favorite.

How to make it?

Knead the dough

Mix the flour and baking powder in a bowl. Rub in the melted butter until the mixture resembles sand, then gradually add the lukewarm milk and knead to a smooth dough.

Make the filling

Mix the chopped walnuts with the granulated sugar.

Shape

10 min

Take walnut-sized pieces of dough and fill each with one 5 ml measure of walnut filling. Shape into rings and arrange on a baking pan.

Bake

18 min

Bake in an oven preheated to 170°C / 340°F for 18 minutes, until the edges are lightly colored.

Cool

15 min

Leave the cookies to cool on the tray for 15 minutes.

Coat in sugar

Once the baked cookies have cooled completely, coat generously in confectioners' sugar.

Reminder

Let the cookies cool completely before coating in confectioners' sugar. If they are still hot, the sugar will melt and clump. Allergens: contains wheat (gluten), milk and dairy products, and tree nuts (walnuts).

Halkaları çatalla desenlemek yerine özel bir kahk kalıbı kullansam pişme süresi değişir mi, yoksa kalıp yalnızca üst desenini mi etkiler, iç harcın miktarını da değiştirmem gerekir mi?

Ceviz yerine hurma ezmesi doldursam aynı 18 dakikalık pişirme süresi yeterli olur mu, yoksa iç harç değişince fırın süresini de kısaltmam mı gerekir; hurma harcı nem oranı daha yüksek diye endişeleniyorum.
