Kalamansi, a small citrus grown in gardens throughout the Philippines, is simmered with sugar and its peel until it quickly thickens into marmalade. Tart with slightly bitter notes, it adds a bright freshness to toast at brunch.

Combine the sliced fruit, granulated sugar, and water in a saucepan. Bring to a boil over medium heat and cook, stirring often, for 25 minutes, until thickened.
Fill sterilized jars with the hot marmalade and seal them. Once completely cool, store in the refrigerator.
Be sure to remove the seeds from the fruit, or the marmalade will turn bitter. Make sure the jars are sterile before filling them.
