Clean the kidneys

A popular Jordanian street food, kalawi mashwiya is a meze of lamb kidneys marinated with cumin and Turkish red pepper flakes, then quickly grilled. The sharpness of lemon juice and garlic balances the richness of the kidneys. They taste best served hot.
Cut the lamb kidneys in half and carefully remove the white membranes and internal fat. Rinse well and pat dry with paper towels.
Mix the olive oil, cumin, Turkish red pepper flakes, crushed garlic, lemon juice, salt and black pepper. Pour over the kidneys and leave to rest for 5 minutes.
Arrange the marinated kidneys in a hot grill pan. Turn them during cooking and grill for 10 minutes in total, until no pink remains in the center.
Transfer the cooked kidneys to a plate, sprinkle with chopped parsley and serve while hot.
Be sure to remove the white membrane and internal fat from the kidneys, or a strong smell will remain. Grill for a total of 10 minutes, so the centers are no longer even slightly pink.
