Kandil simidi is a small cookie made from an unleavened mahleb-scented dough, shaped into thin rings, dipped in sesame seeds, and baked. It resembles simit only in shape; the dough is not leavened, boiled, or dipped in grape molasses water. Mahleb defines this recipe and should be freshly ground: powder that has been open for months loses its aroma and will not be noticeable in the dough.

Grind the mahleb

Freshly grind the mahleb seeds in a mortar or spice grinder, then mix with the flour, baking powder, and salt. Hold the ground mahleb near your nose: it should have a sharp aroma reminiscent of almond kernels. Mahleb with a faint aroma will not come through in the dough.

Knead the dough

Whisk together the melted and cooled butter, oil, sugar, egg, and milk. Gradually add the flour mixture and knead for 8 minutes. The dough should not stick to your hands and should be a little firmer than an earlobe. Cover and let it rest.

Shape the rings

Pinch off hazelnut-sized pieces of dough and roll each under your palm on the counter into a thin 12 cm rope. Join the ends and press the overlap with your finger. Keep the opening in the center about one finger-width wide; a narrower ring will close in the oven and lose its simit-like shape.

Coat with sesame and arrange

8 min

Beat the egg yolk in a bowl and spread the sesame seeds on a flat plate. Dip each ring first in the egg, then in the sesame, and place them spaced apart on a parchment-lined baking sheet. Sesame will not stick once the egg dries, so do these steps one after the other.

Bake

20 min

Bake in an oven preheated to 170°C / 340°F for 20 minutes. They are done when the sesame seeds are golden and the underside of a lifted cookie is light brown. Let them stand on the baking sheet for 10 minutes, then transfer to a rack; the rings will break if lifted while hot.

Reminder

Cover the kneaded dough and let it rest for 20 minutes; this time is not included in the recipe’s total. Dough that has not rested will tear as you stretch it, and the rings will not stay closed.
