Cauliflower florets are boiled just enough and packed into jars with a vinegar brine. With no sweeteners, this is a diabetes-friendly way to preserve vegetables for winter. Precise boiling time is the key to keeping them crisp.

How to make it?

Prepare the cauliflower

Break the cauliflower into small florets and wash them.

Boil

Boil the florets for exactly 3 minutes, then transfer immediately to ice water. Cooking them longer will make them lose their crunch.

Boil the brine

Bring the vinegar, water, salt, black peppercorns, bay leaf and mustard seeds to the boil in a saucepan to make the brine.

Fill the jars

Pack the cooled cauliflower florets and peeled garlic cloves into clean jars and pour over the boiling brine.

Leave to mature

Keep the jars in a cool, dark place for at least 2 weeks to allow the flavor to develop fully.

Reminder

Do not extend the boiling time: cauliflower cooked for more than 3 minutes will remain soft in the pickle and will not regain its crunch.
