This classic Tunisian meze is made by air-frying carrots, then roughly mashing and tossing them with a garlicky harissa and cumin dressing. Serve cold or lukewarm alongside other meze dishes.

How to make it?

Roast the carrots

15 min

Toss the sliced carrots with a spoonful of olive oil and cook in an air fryer preheated to 200°C / 390°F for 15 minutes, until soft. If you do not have an air fryer, roast them in the same way in an oven preheated to 200°C / 390°F.

Make the sauce

5 min

Mix the crushed garlic, cumin, harissa chili paste and remaining olive oil.

Combine

10 min

Roughly mash the roasted carrots with a fork and toss with the dressing. Adjust the salt to balance the flavors. Do not mash too finely, as this will make the meze watery.

Serve

5 min

Squeeze over the lemon juice, garnish with chopped cilantro and serve.

Reminder

Harissa chili paste varies in heat from brand to brand. Start with a little and add more to taste.

Bizim tarafta havuç mezesine biraz da nane eklenir, ben de bir tutam kuru nane ekledim; ferahlık kattı ve harissanın acılığını da bir nebze dengeledi, ailem de bu küçük dokunuşu gerçekten çok beğendi.

Havuçları airfryer'da 200 derecede 15 dakika kızarttım ama benim havuç dilimlerim kalın kalmış olacak ki 20 dakika sürdü. İnce dilimleyince ikinci seferde tam sürede yumuşadı.
