Use a perforated noodle press or a large spoon to drop small pieces of dough into boiling salted water. Once they float to the surface, boil them for 1–2 minutes more, then drain.
Cook the onion in butter over medium-low heat for 15 minutes, until deep golden brown.
Add some of the cooked noodles to a baking dish and sprinkle with cheese. Continue layering, then finish with the caramelized onion on top.
Serve immediately in the warm baking dish once the cheese has melted.
Store covered in the refrigerator for up to 3 days. To reheat, cover and warm in a 160°C / 320°F oven to keep the cheese from drying out.
