Kavut is a traditional, energy-rich dessert from southeastern Anatolia, made by mixing roasted and ground wheat with butter and grape molasses and seasoning it with cinnamon. Shape it into palm-sized balls and freeze them for long-term storage.

How to make it?

Roast the wheat

Shake the wheat constantly in a dry pan and roast it for 15 minutes, until golden but not dark.

Grind

10 min

Let the roasted wheat cool, then grind it in a food processor until it becomes a fine powder.

Mix

Knead the ground wheat with the melted butter, grape molasses, and cinnamon until it clumps together. Mix in the coarsely ground walnuts.

Shape into balls and let them rest

50 min

Squeeze the mixture together in your palm to form palm-sized balls. Let them firm up at room temperature for 50 minutes.

Reminder

Keep shaking the pan while roasting the wheat; kernels that scorch on the bottom will turn bitter and leave a burnt smell throughout the mixture. Allergens: contains wheat (gluten), dairy, and tree nuts (walnuts).
