Pizza and Turkish flatbreads
This delicate specialty from Kayseri is made with unleavened dough rolled paper-thin, topped with ground beef and egg, and baked at a high temperature. The edges turn crisp while the center stays soft.
Knead the flour, water, and salt into a smooth dough. Wrap it and let it rest for 20 minutes.
Combine the ground beef thoroughly with the grated onion, tomato paste, and black pepper.
Roll the rested dough into a long, as-thin-as-possible sheet. Fold the edges in slightly and spread a thin layer of the ground beef mixture over the top.
Bake in an oven preheated to 250°C / 480°F for 6–7 minutes. Crack the eggs into the center and bake for another 2–3 minutes, until the whites are set. Drizzle with melted butter and serve hot.
Do not use too much flour while rolling out the dough; excess flour can make the edges hard and brittle after baking. Contains allergens: wheat (gluten) and egg.
