Inspired by Kazakhstan’s dried-fruit tradition, this compote is made by quickly simmering dried apricots and apples in a pressure cooker until the liquid is clear and balanced. Getting the right balance of sweetness and tartness helps keep the compote clear rather than cloudy.

Prepare the Fruit

Rinse the dried apricots and place them in the pressure cooker with the apple slices.

Cook Under Pressure

15 min

Add the water, sugar, lemon juice, and cinnamon stick. Close the lid and cook for 15 minutes from the time the cooker comes to pressure.

Wait for the Pressure to Release

15 min

Remove the cooker from the heat and wait for the pressure to release naturally. Do not open the lid while it is pressurized.

Strain and Chill

20 min

Remove the cinnamon stick and let the compote cool to room temperature, then chill it in the refrigerator before serving.

Reminder

Do not stir the compote as it cooks; stirring can break up the fruit and cloud the liquid. After cooking, wait for the pressure cooker to release pressure naturally.

Kayısıları bir gece önceden ıslattım, kaynama 15 dakika yerine 10 dakikada bitti ve tatlar gerçekten daha dengeliydi. Karıştırmadan beklemek zor geldi ama sonuç berraktı, bulanıklaşma hiç yaşanmadı.
