A staple of everyday Kazakh meals, this pilaf is made by sautéing onion and garlic in butter, then quickly cooking them with rice. Ready in 25 minutes, it is easy to pack in a lunchbox.
Melt the butter in a pot. Add the chopped onion and sauté until golden, then add the crushed garlic and cook for 1 more minute.
Add the rinsed rice to the pot and sauté, stirring, for 2 minutes until it absorbs the oil.
Add the water, salt, and cumin and bring to a boil. Cover and cook over low heat for 15 minutes, until the water is absorbed.
Remove from the heat and let the rice rest, covered, for 5 minutes. Fluff it with a fork and serve.
Do not uncover the rice immediately after cooking; resting it for 5 minutes helps the grains separate. Contains dairy (butter).
