Grape juice is slowly boiled down to a thick syrup, then diluted with cold water to make this refreshing drink served at Kazakh tables. Keep the syrup in small bottles to turn into a drink whenever you want.

Reduce the heat and continue boiling gently for one hour, stirring, until reduced to a third of its original volume. Add the lemon juice in the last five minutes.
Pour the hot syrup into small sterilized bottles and leave to cool.
To serve, dilute one measure of syrup with cold water and serve over ice.
Stay by the pan while the syrup boils, as it can easily boil over. No sugar is added; the drink relies entirely on the grapes’ own sweetness.
