This dessert from Bursa is made by kneading desalted fresh cheese with semolina and flour into a dough, shaping it into small balls, and baking them before dipping them in cold syrup. Its mild cheese flavor and syrup-soaked texture make it distinctive.

Step by Step

How to make it?

1

Knead the dough

15 min

Knead the desalted cheese with the semolina, flour, egg and baking powder until a smooth dough forms.

2

Shape and bake the balls

25 min

Shape the dough into walnut-sized balls and arrange them on a parchment-lined baking sheet. Bake in a preheated oven until golden.

3

Make the syrup

10 min

Boil the sugar, water and lemon juice for a few minutes, then remove from the heat.

4

Dip the hot balls in the syrup

10 min

Immediately place the hot balls from the oven in the cold syrup. Leave them for a few minutes so they can absorb the syrup.

Reminder

Allergens: contains milk and cheese, wheat flour (gluten), and egg. Important: Soak the cheese in plenty of water to remove its salt before using it. If it is not desalted thoroughly, the dessert will be too salty and will not absorb enough syrup.
