This Iranian stew balances sweet and sour flavors in one pot: dried yellow plums cook with spinach and cubed meat. The plums’ sugar thickens the sauce, while their tartness balances it. The dish is made in spring in Shiraz and Isfahan. Taste as you go to get the balance right; the sweetness of dried plums varies by brand, so adjust the lemon accordingly.

Soften the Plums

Put the dried plums in lukewarm water and set them aside. Once softened, taste one or two: if they are very sweet, omit the sugar from the recipe; if they are tart, keep the 10 g of sugar as written. Do not discard the soaking liquid.

Sauté the onion and bloom the turmeric

Finely chop the onions and cook them in oil over medium heat until the edges turn golden. Without removing the pan from the heat, sprinkle in the turmeric and cinnamon and stir for 30 seconds; dry spices bloom in oil but stay raw-tasting in water.

Sear and Cook the Meat

Pat the meat dry, add it to the pot, and turn it until browned on all sides. Add the water, salt, and black pepper and bring to a boil. Reduce the heat to the lowest setting and cook until the meat is tender enough to pull apart under a fork. Skim off the foam.

Sauté the Spinach

Rinse the spinach well, remove the thick stems, and roughly chop it. In a separate skillet, cook it in batches with a spoonful of oil until it releases its liquid and the liquid evaporates. Adding the spinach directly to the stew would thin the sauce, and that liquid would not evaporate later.

Add the Spinach and Plums

Add the sautéed spinach and drained plums to the pot, along with half of a 200 ml measure of the soaking liquid. Simmer over low heat until the sauce thickens and oil separates around the edges. Stir gently so the plums stay whole for serving.

Balance the Sweet and Sour Flavors

Just before removing the pot from the heat, add the lemon juice and sugar if needed, then taste. The right balance should register as sweet first, followed immediately by tartness. If either one overpowers the other, add more of the opposite flavor in increments of 5 g or 10 ml. Serve with saffron rice.

Reminder

Soak the dried plums in lukewarm water for 30 minutes and save the soaking liquid; it carries both sweetness and tartness and can be used to thin the sauce.
