Kilo keki is a dense cake named for its equal-weight ratio of flour, sugar, butter, and eggs. It contains no baking powder; all the lift comes from air incorporated while beating the butter and sugar, along with the eggs. The beating time is essential and cannot be shortened. Weigh the ingredients

Weigh each of the four main ingredients; measure the eggs by weight rather than by count, which works out to about five medium eggs. The ratio is essential to this cake, so volume measures will not be accurate. Make sure the butter and eggs are at room temperature.

Beat the butter and sugar thoroughly

Beat the butter and sugar together at high speed for 8 minutes, until the color changes from yellow to cream and the volume increases noticeably. This cake has no baking powder; all of its rise comes from the air trapped in the butter during this step. Scrape down the sides of the bowl twice with a spatula.

Add the eggs one at a time

Add the eggs one at a time, beating for 1 minute after each addition. If the mixture splits and looks grainy, add one 15 ml measure of flour and keep beating; it will usually come together. Cold eggs are the most common cause of splitting.

Fold in the flour

Sift in the flour, salt, and lemon zest. Fold with a spatula from the bottom up until no flour is visible. Do not use a mixer; at this stage it would develop the gluten and knock out the air.

Pour into the pan

Pour the batter into a greased and floured loaf pan, then make a shallow dip in the surface from the center toward the edges. The dense batter rises in the center, and this dip helps the cake bake level.

Bake low and slow

Bake in an oven preheated to 160°C / 320°F for 55 minutes. Use 160°C / 320°F rather than the usual 175°C / 345°F because the batter is dense and, at a higher temperature, the outside would brown while the center remained raw. It is done when a toothpick inserted in the center comes out clean. Let it cool in the pan for 20 minutes, then transfer to a wire rack.

Reminder

Bring the butter and eggs to room temperature, and let the cake cool on a wire rack for at least 2 hours. These times are not included in the recipe’s total; kilo keki slices better the next day.

Malzemeleri tartmak şart, bardak ölçüsüyle denedim ve kek ağırlaştı. Yumurtaları teker teker eklemek de şart, ikisini birden koyunca karışım kesildi ve unu kattığımda kek sıkı oldu.
