Kimchi bap grew out of the ever-present supply of sour kimchi in Korean home fridges. The kimchi is cooked with gochujang, then pressure-cooked with rice. Sour kimchi works better here than fresh kimchi, adding depth of flavor. Serve with sesame oil and a sprinkling of sesame seeds.

How to make it?

Cook the kimchi

Sauté the onion and garlic cloves in sesame oil, then add the chopped kimchi. Cook with the gochujang over low heat for 15 minutes to reduce the liquid.

Add the rice

5 min

Add the rinsed rice, kimchi brine and water to the pressure cooker and stir.

Cook under pressure

20 min

Close the pressure cooker lid and bring to the boil over high heat. When it whistles, reduce the heat and cook for 20 minutes.

Let the pressure release

15 min

Take off the heat and wait 15 minutes for the pressure to release naturally. This resting time helps keep the rice grains separate.

Fluff and serve

5 min

Open the lid and fluff the rice with a fork. Sprinkle with sesame seeds and serve.

Reminder

Stir the kimchi frequently while cooking so it does not stick to the bottom of the pan; kimchi that catches on the bottom leaves a bitter taste. Kimchi bapın acı-ekşi dengesi tam kıvamındaydı, özellikle gochujang ve kimchi suyunun birlikte verdiği derinlik başka pilavlarda bulamadığım bir tat.

Tuzlama için tarifte önerilen 20 dakika... hayır, pirinç:su oranını tarifte belirtildiği gibi kullandım ama benim pirincim eski stoktan olduğu için biraz kuru kaldı; bir dahaki sefere 120 mililitre kadar fazladan su ekleyeceğim. Kimchi suyunun tuzunu da hesaba katmak gerekiyor.

Düdüklü tencereniz yoksa normal tencerede kısık ateşte 25 dakika kadar pişirmeyi deneyebilirsiniz; ardından ocağı kapatıp 10 dakika kadar dinlendirmeyi de deneyebilirsiniz, bu basınç düşümünün yerini büyük ölçüde tutar.

Kimchim çok ekşimişti, bu yüzden kavurma süresini tarifte yazan 15 dakikadan 20 dakikaya çıkardım ki keskinlik biraz yumuşasın. Sonuç güzel oldu ama bir dahaki sefere daha az ekşi kimchi ile deneyeceğim.
