These meatless pastry rolls are filled with red lentils that are boiled until the water is absorbed, then sautéed with onion and spices before being wrapped in yufka. Lentils provide more than the texture of ground meat; cooked with tomato paste, they also add similar depth. The water must cook off completely: a wet filling will soften the pastry from the inside and cause the rolls to fall apart.

How to make it?

Boil the lentils

Rinse the lentils, cover them with water by about two finger-widths, and bring to a boil. Simmer for 18 minutes, until all the water is absorbed. When you tilt the pot, no water should run to the bottom; excess liquid will make the filling wet. The lentils should be tender but not completely broken down.

Sauté the onion and add the tomato paste

Finely chop the onion and sauté it in cooking oil for 6 minutes, until the edges begin to brown. Add the tomato paste and cook for 2 minutes, stirring until its raw aroma is gone; undercooked paste can taste metallic in the pastry.

Combine and season

Add the cooked lentils to the onion mixture and sauté together for 3 minutes. Remove from the heat and stir in the cumin, red pepper flakes, salt, and black pepper. Spread on a wide plate to cool.

Fill and roll the yufka

Cut each yufka sheet in half. Place a strip of filling along the wide edge and roll toward the narrow end. Arrange the rolls seam-side down on a greased baking sheet.

Add the sauce and bake

40 min

Whisk the milk and cooking oil together and pour over the rolls. Bake in a preheated 190°C / 375°F oven for 40 minutes. They are done when the tops are deep golden and no sauce remains at the bottom of the pan when tilted.

Reminder

Let the boiled and sautéed lentil filling cool completely before wrapping it in yufka; this cooling time is not included in the recipe duration. Hot filling will soften the pastry with steam.
