Dumplings and filled pastries
Thin sheets of dough are filled with spiced ground beef, folded into triangles, and pan-cooked to make this spicy pocket pastry served at Black Sea breakfast tables. Because it is cooked with little oil, it is presented as a low-calorie breakfast dish.
Knead the flour with lukewarm water until you have a smooth dough.
Cover the dough and let it rest for 15 minutes.
Mix the ground beef with the diced onion, Turkish red pepper flakes, and salt.
Roll the dough into thin sheets and cut them into triangles. Place some of the ground beef filling on each triangle and pinch the dough closed.
Cook the pockets in a lightly oiled skillet for 10 minutes total, turning them until both sides are golden brown.
Let the dough rest before rolling it out; otherwise, the thin dough sheets may tear easily. Contains wheat (gluten).
