A holiday favorite in Iraq, klecha is made by filling dough flavored with mahlab and cardamom with date paste, pressing it in a mold to create a pattern, and baking it. The dough contains no milk or dairy products, making this dessert suitable for a wide range of guests.

How to make it?

Knead the dough

Combine the flour, sunflower oil, granulated sugar, instant dry yeast, mahlab, and cardamom in a bowl. Add the warm water and knead until a soft dough forms. Let it rise for 45 minutes.

Fill and shape

15 min

Divide the dough into small balls and fill each with date paste. Seal them and press them in a patterned mold to shape.

Bake

25 min

Bake in an oven preheated to 180°C / 355°F for 25 minutes, until golden.

Reminder

Do not press the dough too thin when shaping it in the mold, or the date paste may squeeze out. Allergen: contains wheat (gluten).
