A holiday-table favorite in Iraq, kleyça are made by filling whole-wheat dough with mashed dates and baking until done. The dates provide the sweetness instead of refined sweeteners, and the cookies can be stored in the freezer for a long time.

Step by Step

How to make it?

1

Prepare the filling

10 min

Soften the dates by soaking them in hot water for a few minutes. Drain and blend with the cinnamon into a smooth paste.

2

Knead the dough

10 min

Mix the whole-wheat flour, baking powder and salt. Add the melted butter and lukewarm milk, then knead until a soft dough forms.

3

Fill and shape

15 min

Pinch off pieces of dough weighing about 25 g and flatten them. Place one 5 ml measure of date filling in the center of each piece and seal the edges well. Decorate the top with a fork.

4

Bake

20 min

Bake in a preheated 180°C / 355°F oven for 20 minutes, until the bottoms are lightly colored.

Reminder

Seal the edges of the dough well around the date filling; any gaps can let the filling spill out during baking. Allergens: contains wheat (gluten), milk and dairy products (butter and milk).

180 derecede 20 dakika yazan süre bende erken oldu, kenarları hızla koyulaştı ama tabanı hâlâ hamur gibi yumuşacıktı; bir dahaki sefere 5 dakika eksiltip 15 dakikada deneyeceğim, belki fırınım biraz güçlü ısıtıyordur.
