This traditional Iraqi dish has a shell made from fine bulgur and ground beef, filled with spiced ground beef and walnuts, then fried until crisp. It is hearty enough to serve as a main course.

How to make it?

Make the outer shell

30 min

Soak the fine bulgur in lukewarm water for 30 minutes, then drain. Knead it thoroughly with the ground beef, flour, and salt until a smooth shell dough forms.

Cook the filling

15 min

Sauté the onion, add the ground beef, then mix in the walnuts, cumin, and red pepper flakes. Let the filling cool.

Fill and shape the patties

25 min

Take pieces of the shell dough and flatten them in your palm. Hollow out the center, add the filling, seal the edges, and shape each piece into an oval.

Fry the kubba

20 min

Fry the kubba in hot oil until golden and crisp. Drain on paper towels.

Reminder

Important: Add the water gradually while kneading the outer shell; too much can make it loose and cause it to fall apart during frying. Keep the shell thin and even when filling it, or thick areas may remain undercooked. Allergen: contains tree nuts (walnuts) and gluten (bulgur).

Bu tarifin klasik versiyonunu farklı biliyordum, yine de denemek güzeldi. Tuz-şeker dengesi bende tam oturmadı, kişisel damak zevkine göre değişir. Tarif güzel ama anlatım biraz karışık geldi, adımlar netleştirilebilir.
