Kubdari comes from Georgia’s mountainous Svaneti region. It is made by filling yeasted bread dough with seasoned ground beef and baking it. Served hot, the meat filling releases its juices and makes a satisfying meal.
Knead the flour, yeast, warm water, salt, and olive oil into a smooth dough. Let it proof in a warm place for 60 minutes.
Thoroughly knead the ground beef with the grated onion, cumin, Turkish red pepper flakes, and salt to make the filling.
Roll out the risen dough and place the filling in the center. Gather the edges, turn it seam-side down, and press gently to flatten it.
Prick the top lightly with a fork and bake in a preheated oven until golden.
Important: Do not roll the dough too thin when filling it, or the meat juices may leak out. Before baking, prick the top lightly with a fork so steam does not build up and tear the dough. Allergens: contains wheat (gluten) and egg.
