Külünçe is a yeasted bread made by the trayful for holiday mornings in Erzurum and Kars. Unlike cookies, it is made with yeast; unlike savory Turkish pastry, it is sweet. It falls somewhere between the two. Mahleb gives it its aroma, and it is only mildly sweet because it is served with sweet tea.

How to make it?

Knead the dough

Mix the flour, yeast, sugar, ground mahleb, and salt; do not place the salt directly against the dry yeast. Add the warm milk and eggs and begin kneading. Add the room-temperature butter a little at a time. After 12 minutes, the dough should be soft, shiny, and slightly sticky.

Divide the dough

Punch down the risen dough, divide it into 20 equal portions, and roll each into a ball in your hands.

Shape the rolls

Roll each portion into a thin rope about 10 cm long, then join the ends to make a ring, or press each ball into a flat disk. Arrange them on a parchment-lined baking sheet, leaving two finger-widths between them.

Prepare the topping

Whisk the egg yolk with one 4 ml measure of milk. Brush it over the rolls and sprinkle with sesame seeds.

Bake

20 min

Bake in a preheated 180°C / 355°F oven. Remove the rolls when the tops are golden and the bottoms are lightly browned; baking for more than 20 minutes will make them dry and hard the next day. Cool on a wire rack.

Reminder

After kneading, let the dough rise in a warm place for 1 hour. After shaping, let it rise on the baking sheet for another 30 minutes. If you skip the second rise, the rolls will not puff up in the oven and will have a dense crumb.
