Unlike the Kayseri manti version served with cooking liquid, Sivas-style kuru manti are boiled, drained, and toasted directly in butter. They make a hearty brunch, served with garlic yogurt and a mint sauce with red pepper flakes.

Step by Step

How to make it?

1

Knead the dough

15 min

Knead the salt, flour, egg, and water together until you have a smooth, firm dough.

2

Prepare the filling

10 min

Finely chop the onion and mix it with the ground meat, black pepper, and salt.

3

Seal the dumplings

15 min

Roll the dough thin and cut it into small squares. Put a little filling in the center of each square, bring the corners together, and seal.

4

Boil and toast the dumplings

15 min

Boil the dumplings in water and drain them. Toast them in butter, then serve with yogurt mixed with garlic and a mint sauce with red pepper flakes.

Reminder

Press the edges firmly closed when shaping the dumplings; loosely sealed dumplings may open in boiling water and lose their filling. Allergens: wheat (gluten), dairy, and eggs.

Brunch sofrasına yaptım, sarımsaklı yoğurdun üzerine gezdirdiğim pul biberli tereyağı gerçekten fark yarattı, klasik sulu mantıdan çok daha doyurucuydu.
