Around Kütahya, meatless manti is a field-to-table dish: the filling uses green lentils, onion, and plenty of black pepper. Lentils behave differently from ground meat and do not absorb water while cooking, so cook plenty of onion and add one spoonful of cooking water to keep the filling moist.

Cook the lentils

Rinse the green lentils and simmer them over low heat in three times their volume of water. They are ready when a lentil breaks apart when pressed but still holds its shape; add the salt during the final 5 minutes. Drain them thoroughly and reserve one spoonful of the cooking water.

Knead the dough

Knead the flour, egg, salt, and water for 10 minutes to make a firm dough. Shape it into a ball and cover it with a damp cloth.

Cook the filling

Finely dice the onion and cook it in oil over low heat for 10 minutes, until softened and sweet. Add the drained lentils and mash about half with a fork. Stir in the spices and the reserved spoonful of cooking water, then spread the filling on a wide plate.

Roll out the dough

Divide the rested dough into four pieces and roll each to 1.5 millimeters thick. Cut into 3 cm squares. Lightly flour the squares as you wait, and do not stack them or they will stick together.

Fill and seal

Place half of a 4 ml measure of cooled filling on each square and bring the four corners together in the center. Lentil filling is looser than ground meat, so gather it with your fingertips rather than a spoon, and press the edges firmly to seal.

Boil and sauce the dumplings

Bring 3 liters of salted water to a boil and add the dumplings; once they float, boil for 6 more minutes. Drain. Whisk the yogurt with the garlic and spoon it over the dumplings. Cook the tomato paste in butter for 1 minute and drizzle it on top.

Reminder

Let the dough rest for 40 minutes and cool the lentil filling completely before filling; both are passive resting periods. Hot filling softens the dough with steam and can open the sealed edges. Salt the lentils at the end of cooking; adding salt early keeps their skins firm and makes them harder to mash.
