This dish combines boiled pasta with a sauce made from tahini, lemon juice and garlic, then tops it with breadcrumbs toasted in the air fryer. It brings the tahini-based sauces of Lebanese cuisine to a sharing table. Whisking the sauce in the right order is key to keeping it smooth without splitting.
Boil the pasta in salted water for the time stated on the package, then drain, reserving one spoonful of the cooking water.
Crush the garlic and begin whisking it with the tahini and lemon juice; the mixture will thicken at first. Gradually add the reserved pasta water until you have a smooth sauce.
Toss the crumbled bread with olive oil and salt, spread it in the air fryer basket and toast at 180°C / 355°F for 8 minutes, until golden and crisp. If you do not have an air fryer, you can toast it in an oven at the same temperature for 8 minutes.
Toss the boiled pasta with the tahini sauce and spread it on a large platter. Sprinkle the toasted breadcrumbs and parsley over the top and serve.
When you first combine tahini and lemon juice, the mixture will seize and thicken; do not worry. Add water and keep whisking until it becomes a smooth sauce. Allergen: contains wheat (gluten) and sesame (tahini).
