Lebanese za’atar pastry is a thrifty Lebanese bake made by kneading leftover bread dough with olive oil and za’atar, then baking it in thin layers. Knead leftover dough separately from fresh dough to keep the baking time consistent. Resting the dough in the oven creates a pleasant crispness between the layers.
Cover the leftover bread dough and let it rest at room temperature for 1 hour.
Mix the olive oil with the za’atar and sesame seeds.
Roll the rested dough into thin layers and spread the za’atar mixture evenly over the top.
Bake in an oven preheated to 220°C / 430°F for 15 minutes, until the edges are crisp and golden.
If you roll out the dough before it has rested enough, it may turn firm instead of crisp in the oven; do not shorten the resting time. Allergens: contains gluten (flour) and sesame/tahini (in the za’atar blend).
