Add the dried lemon balm leaves to the hot water, cover, and let steep for 5–7 minutes, until the water turns a pale yellow-green.
Strain the tea through a fine-mesh strainer into cups. Sweeten with one 5 ml measure of honey if desired and serve hot.
Important: Add the lemon balm leaves to water that has been removed from the heat and rested for a few seconds, rather than to boiling water; prolonged boiling will drive off their aroma. People who take regular medication, especially thyroid or sedative medication, should consult a doctor before drinking this tea.
