This Colombian beef tongue classic is made by cooking the tongue in a pressure cooker until tender, peeling it, marinating it with cumin and lemon, then briefly grilling it. Peeling the skin requires a careful touch.

How to make it?

Cook the tongue

Put the beef tongue in a pressure cooker with the onion, bay leaf, black pepper, and plenty of water. Cook over low heat for 35 minutes.

Peel the skin

Remove the cooked tongue from the liquid. While it is still hot, scrape off the skin with a knife; this step takes care, as the skin is harder to remove once cool.

Marinate

Slice the peeled tongue 1 cm thick and marinate it for 10 minutes with the olive oil, cumin, lemon juice, and salt.

Grill

6 min

Grill the slices over an open flame or in a grill pan for 3 minutes per side, 6 minutes total, and serve hot.

Reminder

Peel the tongue while it is still hot; as it cools, the skin sticks to the meat and becomes harder to remove. Allergen-free.

Dili kabuğundan soymak tarifte yazdığı gibi kolay olmadı, sıcakken bile elimde kaydı ve 10 dakika yerine neredeyse 20 dakikamı aldı; ustalık gerektiren bir adım olduğu doğru ama süre biraz iyimser yazılmış.
