Slices of ripe mango meet ginger-infused honey syrup and finely chopped chili in this dish inspired by the sweet-and-spicy fruit snacks of Filipino streets. Light and free of added oil, it makes a heart-friendly breakfast option.

How to make it?

Slice the mango

Peel the mangoes, cut thin slices from either side of the pits and arrange on a plate.

Make the ginger syrup

Bring the grated ginger, honey, lemon juice and water to a boil in a small saucepan, then cook over low heat for 5 minutes.

Prepare the chili

Stir the finely chopped hot red pepper into the lukewarm syrup.

Leave to infuse

Pour the syrup over the mango slices and leave for 5 minutes to let the fruit absorb it.

Serve

Serve immediately, adding a few slices of fresh ginger on top if you wish.

Reminder

The flesh near the mango pit is fibrous, so bear that in mind when slicing. Thin slices absorb the syrup more readily. Remove the chili seeds for a milder dish.
