Preparing the Honey Mixture

Medovik is a labor-intensive Uzbek tea-time cake made by layering thin honey-flavored cake rounds with a cream cheese frosting and chilling it. Rolling the layers thin and working with the frosting both take patience.
Gently warm the honey, eggs, and granulated sugar over a double boiler. Add the baking soda and whisk until foamy.
Remove the mixture from the heat and gradually add the flour to form a soft dough.
Divide the dough into 8 equal pieces. Brush each with butter and roll it paper-thin. Bake the layers one at a time in an oven preheated to 180°C / 355°F, for a total of 35 minutes.
Whip the cream with the cream cheese to make the frosting. Stack and sandwich the baked cake layers with the frosting.
Refrigerate the cake for at least 4 hours so the frosting can soak into the layers. Slice and serve.
The layers can burn in the blink of an eye, so do not extend the baking time. Allergens: Contains wheat (gluten), egg, and dairy products.
