Medu vada is a South Indian breakfast fritter made without flour, yeast, or baking powder. Air whipped into the batter gives it a crisp exterior and a spongy center. Use as little water as possible; too much makes the batter runny and the fritters will not hold their shape in the oil.

Drain and grind the lentils

Let the soaked lentils drain in a colander for 10 minutes so the excess water runs off. Blend them in a food processor, adding water a little at a time, until you have a smooth, thick batter. You do not have to use all the water; the batter should fall slowly from a spoon.

Whip air into the batter

Add the salt and beat the batter quickly in one direction with a wooden spoon or by hand for 8 minutes. Put a drop of batter into a glass of water: if it floats, it has trapped enough air; if it sinks, keep beating.

Shape the rings

Stir in the grated ginger, chopped green chili, and cilantro. Wet your hand, take a spoonful of batter into your palm, flatten it, and make a hole in the center with your thumb. A wet hand keeps the batter from sticking.

Heat the oil

Heat the oil in a deep skillet over medium heat. A drop of batter should puff up immediately and rise to the surface. If the oil is too hot, the outside will set at once while the center remains raw.

Fry the fritters

Fry the rings in three batches without crowding the skillet, about 4 minutes per batch. Remove them when the crust is golden and the fritters feel lighter as you lift them with tongs. Drain on paper towels.

Reminder

Soak the urad dal in cold water for 4–6 hours, then drain it thoroughly. Do not let the ground batter stand; fry it right away, or the trapped air will escape and the vada will not puff up and will absorb more oil.

Hamuru havalandırma adımı halkaların içini süngerimsi yapıyor. Çırpmadan kızartınca içi ağır ve yağlı oldu. Halkaları şekillendirirken elleri ıslatmak da gerekiyor, kuru elde hamur yapışıp ortadaki delik kapanıyor.
