A staple of festive tables in Greece, melomakarona are semolina cookies that are baked and dipped in honey syrup while still hot. The orange-scented dough and walnut topping make them soft cookies that children enjoy too.
Knead the semolina, flour, cooking oil, orange juice, orange zest, baking powder and cinnamon together, then shape into small oval cookies.
Arrange the cookies on a parchment-lined baking pan. Bake in an oven preheated to 180°C / 355°F for 25 minutes, until the undersides are lightly browned.
Bring the honey, granulated sugar and water to a boil in a saucepan, then continue boiling for 5 minutes.
Dip the hot cookies in the hot syrup for a few seconds, then lift them out and let the excess drip off. Sprinkle with chopped walnuts.
Dip the cookies into the hot syrup as soon as they come out of the oven; cooled cookies will not absorb it and will stay dry. Allergen: contains gluten (semolina and wheat flour) and tree nuts (walnuts).
