Inspired by Mexico's tomato and cilantro rice dishes, this recipe quickly sautés grated cauliflower over a high heat. Made without grains, it offers an alternative suitable for a ketogenic diet.

Grate the cauliflower

Grate the cauliflower or pulse it in a food processor until finely grainy. Press with a clean cloth to remove excess moisture.

Sauté

Cook the onion and crushed garlic clove in olive oil for 1 minute. Add the tomato and cumin and cook for 2 minutes. Add the cauliflower and salt, then sauté over a high heat for 5 minutes, stirring constantly.

Serve

Stir in the cilantro and serve hot.

Reminder

Overcooking cauliflower makes it release water and turn mushy. Cook it briefly over a high heat to keep a rice-like texture. Dry it thoroughly before grating, or it will steam in the pan and become watery.

Domates bulamadığım bir gün küçük bir kutu domates konservesiyle denedim, sonuç biraz daha sulu oldu ama tadı yine de fena değildi. Taze domatesle yapıldığında daha kuru bir pilav dokusu elde ediliyor.
