Divide the risen dough into small balls and roll them out thinly. Place a small amount of spinach filling in the center of each, then bring together three edges to seal into small triangles.
Arrange the fatayer on a parchment-lined baking sheet and bake in an oven preheated to 190°C / 375°F, until golden brown.
