This tart, spiced Syrian drink is made by steeping sumac with lemon and ginger in water, then refreshing it with fresh mint. With no added sweetener, its natural tartness stands out. It is easy to carry in a thermos for a picnic.

How to make it?

Steep the Sumac

10 min

Combine the sumac and grated ginger with hot water. Cover and let steep for 10 minutes.

Strain

5 min

Strain the mixture through a fine cheesecloth, squeezing the grounds well to extract the liquid.

Refresh and Chill

60 min

Stir the lemon juice and a pinch of salt into the strained liquid. Add the crushed mint leaves and refrigerate for 1 hour.

Serve

5 min

Strain the chilled drink into ice-filled glasses and garnish with a few fresh mint leaves.

Reminder

Strain the sumac through a fine cheesecloth. A coarse strainer will leave sandy sediment in the drink.

İlk seferinde tülbent yerine normal süzgeç kullandım, şerbette gerçekten kum gibi bir tortu kaldı ve içimi rahatsız etti. Tülbentle tekrar yaptığımda sorun tamamen çözüldü, tadı da beklediğimden daha ekşiydi.
