Boil the Water

Mint tea, a symbol of hospitality at Tunisian tables, is enriched here with toasted pine nuts. Steeping the green tea briefly before adding the mint is the key to preventing bitterness.
Bring the water to a boil.
Add the green tea and steep for 3 minutes.
Add the fresh mint and steep for 5 more minutes.
Strain the tea into cups and sprinkle the toasted pine nuts over the top.
Do not add the green tea and mint at the same time. Steeping the green tea by itself first helps prevent bitterness.
